1 1/2 LBs Baby Potatoes (Cooked and Sliced)
1/4 LBs Radishes (Sliced)
1 English Cucumber (Sliced)
1/2 Cup Plain Greek Yogurt
1/2 Cup Fresh Parsley (Chopped)
1/2 Cup Fresh Cilantro (Chopped)
1 TBSP Dijon Mustard
Pinch of Salt
Pinch of Ground Black Pepper
Add all of the ingredients to a large glass bowl, mix gently so as not to break the potatoes, when combined pour salad onto a platter and serve.
