3 Avocados (Peeled, Pitted and Chopped)
1 TBSP Balsamic Vinegar
1/4 Cup Scallions (Finely Sliced)
10 Cherry Tomatoes (Quartered)
1/4 Cup Fresh Cilantro (Finely Chopped)
Pinch of Salt
Pinch of Ground Black Pepper
Add the chopped avocado to a medium glass bowl and using the back of a fork, mash them until they are smooth but still remain a little chunky.
To the mashed avocado, add the balsamic vinegar and stir to combine.
Add in the sliced scallions, cherry tomatoes and chopped cilantro and gently mix to combine evenly.
Season with salt and pepper, cover and refrigerate for 30 minutes or until ready to serve.
