2 LBs Small Baby Potatoes (Washed)
4 TBSP Olive Oil
1 TBSP Fresh Mint (Chopped)
1 TBSP Fresh Parsley (Chopped)
1 TBSP Fresh Rosemary (Chopped)
1 TBSP Fresh Oregano Leaves
1 TBSP Fresh Dill (Chopped)
1 TSP Salt
1 TSP Ground Black Pepper
Preheat the oven to 350 degrees.
Line a baking sheet with parchment paper, set aside.
In a large glass bowl, add the baby potatoes and olive oil and toss to coat.
Season the coated potatoes with the herbs, salt and pepper and toss once more to coat evenly.
Add the potatoes (and herbs in bottom of glass bowl) to the lined baking sheet and place in the oven for 40 minutes or until the potatoes are fork tender.
Remove from the oven and serve piping hot.
