8 Mangoes (Peeled, Seeded and Sliced)
2 Cup Water
1/2 Cup Sugar
2 Cup White Sugar
1/2 Cup Butter (Softened)
2 Cups All Purpose Flour
4 TSP Baking Powder
1/4 TSP Salt
1 Cup Whole Milk
1 TBSP Vanilla Extract
Preheat the oven to 375 degrees.
Grease a 9x13 baking dish and set aside.
Over medium heat, in a heavy bottomed pan, place the mangoes, 1/2 cup of sugar and water and simmer stirring occasionally for 5-10 minutes until all of the sugar has dissolved.
Drain the syrup and reserve in a medium glass bowl.
In a second glass bowl, add the butter and 2 cups of white sugar and beat until light and creamy.
In a third bowl, mix together the flour, baking powder and salt, slowly add this mixture and the whole milk to the butter and sugar and mix well.
Add vanilla extract and stir to combine.
Once mixed, transfer the mixture to the greased baking dish, cover with the reserved sliced mangoes and drizzle half of the reserved syrup over the top of the mangoes.
Bake in the preheated oven for 40-45 minutes until golden brown and bubbling.
Serve hot with cream, ice cream or on its own.
