2 LBs Carrots (Peeled and Cut Into 1" Slices)
1 Cup Vegetable Broth
1/4 Cup Maple Syrup
2 TBSP Red Wine Vinegar
1 TBSP Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper
In a large skillet over medium high heat, add the olive oil and heat until shimmering.
Add the carrots to the skillet once oil has heated and cook for 3 minutes.
After 3 minutes, add the vegetable broth, maple syrup, vinegar, salt and pepper, stir to coat the carrots and bring the mixture to a boil, once boiling, lower the heat to medium and simmer, covered for 10 minutes.
Remove lid from the skillet and allow the mixture to continue cooking until the carrots are tender and the liquid has thicken, roughly 8-10 minutes.
Remove skillet from heat and serve glazed carrots while hot.
