2 LBS Sourdough Bread (Toasted and Cut Into Large Dice)
1 Gallon of Water
1/2 TBSP Fresh Yeast
3/4 TBSP Sugar
In a large glass bowl or soup pan, soak the bread in the water and yeast for 12 hours, covered in a warm place.
After 12 hours, remove the bread and squeeze all of the liquid out of it, discard bread.
Loosely cover the liquid and allow to ferment at room temperature for 48 hours.
In a large pan, over medium heat, reduce the liquid to a consistency of Marmite, this process will take several hours and liquid should reduce down to approximately 1-2 Cups of homemade Marmite.
