Bacon & Egg Bites Recipe.


Ingredients:


5 Large Eggs
1/2 Cup Swiss Cheese (Shredded)
1/4 Cup Cottage Cheese (Full-Fat)
1/4 TSP Salt
1/4 TSP Fresh Ground Black Pepper
2-3 Slices Bacon (Cooked & Chopped)


Recipe Instructions:


Preheat oven to 300 degrees.
Place a baking dish filled with 1" of water onto the bottom shelf of the oven.
Into the bowl of a blender or food processor add the eggs, cheese, cottage cheese, salt and pepper and blitz for about 30 seconds to mix well.
Spray a muffin tin with non-stick cooking spray and fill tins with the egg mixture until almost full.
Divide the bacon evenly between the muffin tins and bake in the oven for 30 minutes until the center of the egg bites are firm.
Allow to cool and using a spatula or knife, remove the egg bites from the tin, continue cooling or consume while still warm.
