2 Eggs (Beaten)
1/4 Cup Low-Fat Mozzarella Cheese (Shredded)
1 Medium Tomato (Sliced)
1/4 Cup Fresh Basil (Torn)
Pinch of Salt
Pinch of Ground Black Pepper
1 Tortilla Wrap
In a non-stick skillet over medium heat, add the beaten eggs and scramble them, but make sure to not overcook them, add salt and pepper to taste.
Spread the eggs on one half of the tortilla wrap.
To eggs with torn basil leaves, sliced tomato and shredded mozzarella cheese.
Fold the tortilla in half and toast in a lightly oiled non-stick skillet on both sides until golden brown.
Slice and enjoy immediately.
