4 Cups Cauliflower Rice
1/2 Cup Sliced Almonds (Toasted)
1/2 Cup Parsley (Chopped)
2 TBSP Olive Oil
2 Cloves of Garlic (Minced)
1 TBSP Fresh Lemon Juice
1/2 TSP Crushed Red Pepper Flakes
1/4 TSP Salt
1/4 TSP Ground Black Pepper
In a large skillet over medium heat, add the olive oil and heat until shimmering, once the oil begins to shimmer, add the minced garlic and cook for about 30 seconds.
Add the cauliflower rice, red pepper flakes and salt and stir to combine, continue to cook for another 8-10 minutes or until the cauliflower rice begins to get tender, stirring occasionally.
Remove the skillet from the heat, add in the toasted almonds, parsley and lemon juice, season and mix until well combined, serve warm.
