2 TBSP Olive Oil
2 Red Onions (Finely Chopped)
4 Cloves Garlic (Grated)
1" Fresh Ginger (Grated)
2 TSP Crushed Red Pepper
2 TBSP Cumin Seeds
2 TBSP Ground Turmeric
2 (14 Oz) Cans Chopped Tomatoes
2 TBSP Unsweetened Cocoa Powder
2 (14 Oz) Cans Chickpeas
2 Yellow Bell Peppers (Chopped Roughly)
2 TBSP Fresh Parsley (Chopped)
1/2 TSP Salt
1/2 TSP Fresh Ground Black Pepper
Place olive oil and chopped red onions in a large pan and cook gently while covered over a medium-high heat for 4-6 minutes until onions are soft.
Remove the lid and add the garlic, ginger, cumin and chili.
Cook for another minute on low heat then add the turmeric and splash of water and cook for another minute.
Add in the tomatoes, cocoa powder, chickpeas and yellow pepper.
Bring the mixture to a boil, then, simmer on low heat for 45-50 minutes until the sauce has thickened.
Stir in the parsley, season with salt and pepper as needed and serve hot in bowls.
