Mediterranean Hummus Bowl Recipe.


Ingredients:


1 Cup Hummus
1 Cup Quinoa (Cooked)
2 Cups Baby Spinach Leaves
1/2 Red Onion (Sliced)
1/2 Pint Cherry Tomatoes (Quartered)
1/2 English Cucumber (Sliced)
1 Cup Chickpeas
1/2 Cup Olives (Pitted)
1 TBSP Fresh Parsley (Chopped)
1 TBSP Extra Virgin Olive Oil


Recipe Instructions:


Place the hummus in the center of a bowl and spread across the bowl with the back of a spoon to create swirls.
Add the spinach, quinoa, cherry tomatoes, cucumber, chickpeas and sliced red onion and olives (in that order) on top of the hummus.
Drizzle with olive oil, sprinkle with the chopped parsley and enjoy immediately.
