1/4 TSP Salt
1/4 TSP Ground Black Pepper
4 (6 Oz) Salmon Fillets (Skinless)
Cooking Spray
2 Cups Cherry Tomatoes (Halved)
1/2 Cup Zucchini (Finely Chopped)
2 TBSP Capers (Undrained)
1 TBSP Olive Oil
1 (2 1/4 Oz) Can Sliced Ripe Olives (Drained)
Preheat oven to 425 degrees.
Sprinkle both sides of the salmon with salt and pepper.
Place salmon on a baking dish coated with cooking spray.
In a small glass bowl, combine the tomatoes, zucchini, capers, olive oil and sliced olives, spoon mixture evenly over the 4 salmon fillets.
Bake in oven for 25 minutes.
Serve hot with pasta, grilled vegetables, rice or cold with a salad.
