Mexican Quinoa Skillet Recipe.


Ingredients:


1 (15 Oz) Can Pinto Beans (Drained and Rinsed)
1 (10 Oz) Can Tomatoes with Chilis
1 (15 Oz) Can Corn (Drained)
1 Cup Quinoa
1 Cup Vegetable Broth
1 Clove Garlic (Minced)
1/2 TSP Chili Powder
1/2 TSP Ground Cumin
1/2 TSP Crushed Red Pepper Flakes
1 TBSP Fresh Cilantro (Chopped)


Recipe Instructions:


Place all ingredients other than cilantro in a large skilled and bring to the boil over a medium-high heat.
Once the mixture has come to a boil, reduce heat to medium and simmer, covered for 15-25 minutes, until the quinoa has absorbed all of the liquid, stirring occasionally.
Remove skillet from heat and sprinkle with chopped cilantro, serve immediately.
