3/4 Cup Yellow Onion (Diced)
1 Cup Yellow Bell Pepper (Sliced)
1/2 Cup Poblano Pepper (Sliced)
1/4 Cup Serrano Pepper (Sliced)
1 TBSP Olive Oil
1 1/2 Cup Black Beans (Reduced Sodium)
1 (15 Oz) Can Fire Roasted Tomatoes
1 LB Ground Beef
1 Package Taco Seasoning
1 Cup Cream Cheese
1 TBSP Cilantro (Chopped)
Heat a large skillet over medium heat.
Add the oil, onion and peppers to the skillet and cook for 5-7 minutes until they begin to soften and brown ever so slightly around the edges.
Add the ground beef and taco seasoning and using a heavy spoon break up the meat into small chunks, cook until ground beef has browned, roughly 7-9 minutes.
Add the black beans and diced tomatoes, stir to combine evenly.
Add the cream cheese, stir until melted and well combined.
Serve hot with a sprinkling of freshly chopped cilantro.
