1 TBSP Olive Oil
1/2 Red Onion (Chopped)
1 Celery Rib (Chopped)
1 TSP Ground Cumin
1 1/4 Cup Vegetable Stock
1 Cup Canned Chopped Tomatoes
1 Cup Chickpeas (Rinsed and Drained)
1/4 Cup Black Beans (Rinsed and Drained)
1/2 Lemon (Zested and Juiced)
1 TBSP Cilantro (Chopped)
Pinch of Salt
Pinch of Ground Black Pepper
In a large skillet, heat the olive oil over medium heat, add the onion and celery and Sautee for 10 minutes until softened.
Add the cumin, stir and cook for about 1 minute longer until fragrant.
Increase the heat to medium-high, add the vegetable stock, tomatoes, chickpeas, salt and pepper.
Simmer, covered for 8-10 minutes.
Add the black beans and lemon juice and cook for another 3-4 minutes.
Top with lemon zest and chopped cilantro, serve hot.
