8 Eggs (Hardboiled and Peeled)
4 Romaine Lettuce Leaves (Washed and Dried)
1/3 Cup Paleo Mayonnaise
8 Sliced bacon (Cooked and Crumbled)
3 TBSP Red Onion (Finely Diced)
1 Rib Celery (Finely Diced)
Pinch of Cayenne Pepper
1 Dill Pickle (Finely Diced)
Pinch of Salt
Pinch of Ground Black Pepper
In a large glass bowl, combine mayo, onion, celery, cayenne pepper, pickle and salt and pepper and stir until ingredients are well mixed.
Chop the eggs and add to the mixture, then stir in the crumbled bacon.
Top with paprika and serve over a romaine lettuce leaf.
