Millet Wraps With Artichoke Dip Recipe.


Ingredients:

For Wraps

3/4 Cup Millet Flour
2 Cups Almond Milk
3 TBSP Grapeseed Oil
1 TBSP Fresh Herbs (Chopped)
4 Eggs
Pinch of Salt
Pinch of Ground Nutmeg
Coconut Oil (For Frying)

For Filling

1/2 Cup Fennel (Julienned)
1/2 Cup Red Bell Pepper (Julienned)
1/2 Cup Carrots (Julienned)
1/2 Cup Celeriac (Julienned)
2 TBSP Grapeseed Oil
Pinch of Salt
Pinch of Nutmeg
Pinch of Marjoram
Pinch of Oregano
Pinch of Sage

For Dip

3/4 Cup Sheep's Cheese
1 Jar Pickled Artichoke Hearts
1 TSP Lemon Juice
3/4 Cup Hummus


Recipe Instructions:


Place the batter ingredients into a medium glass bowl and mix until well combined and smooth.
In a non-stick skillet, place 1/4 cup in heated coconut oil and cook for 2 minutes, flip and continue cooking for another minute, remove from skillet and keep warm, repeat with remaining batter.
In another skillet with some olive oil, saut? The vegetables until al dente, season with salt, nutmeg and herbs, mix well and remove from heat.
In the bowl of a blender, add the sheep's cheese, artichoke hearts and lemon juice, blitz for 2 minutes until smooth and creamy.
Spread each of the wraps with a thin layer of the hummus, roll up into a cone and fill with the vegetable mixture, serve the dip in a separate dish and enjoy.
