3 Slices Bacon
8 Hard Boiled Large Eggs
1/3 Cup Mayonnaise
2 TBSP Sandwich Relish
1 TSP Mustard
Salt & Pepper to Taste
In an 8 to 10-inch skillet cook bacon until crispy over a medium-high heat.
Once cooked, remove from skillet and drain on paper towel.
Once cool enough to handle, crumble.
Cut each egg in half lengthways and gently scoop out the yolks and place into a bowl.
Add relish, mustard, mayonnaise, salt and pepper and crumbled bacon to same bowl as the yolks and mix until blended and smooth.
Spoon or pipe about 1 TBSP of the yolk mixture into each half of the hollowed egg white.
Serve immediate or cover and chill for up to 4 hours.
