1 1/2 TBSP Miso
1 1/2 Cups Water
1/2 Cup Soft Tofu (Cubed)
1 Cup Sliced Vegetables (Carrots, Mushrooms or Snow peas)
1 Scallion (Thinly Sliced)
Put the water in a medium pan over high heat and bring to a rolling boil.
Once the water has boiled, add the cubed tofu and sliced vegetables and simmer for 4-5 minutes.
Remove the pan from the heat and stir in the miso paste.
To serve, pour the soup into a bowl of mug and top with the scallion.
