1/2 Cup Green Olives (Sliced)
1/2 Cup Black Olives (Sliced)
1/2 Cup Cherry Tomatoes (Halved)
1/2 Red Onion (Finely Chopped)
2 Cloves of Garlic (Minced)
2 TBSP Sun-Dried Tomatoes
1/4 Cup Feta Cheese (Crumbled)
Pinch of Salt
Pinch of Ground Black Pepper
8 Slices Italian Bread (Toasted)
In the bowl of a food processor, place the sun-dried tomato's and pulse until a smooth paste has formed, once paste has been made, spread it evenly across the 8 slices of toasted bread.
In a medium glass bowl, combine the remaining ingredients and mix to evenly combine.
Place roughly 3/4 TBSP of the olive mixture on top of the sun-dried tomato paste, season lightly with salt and pepper and enjoy immediately.
