1 Green Bell Pepper (Sliced)
2 Jalapeno Peppers (Finely Diced)
1 Onion (Sliced)
4 Eggs
6 Slices Bacon
1 TSP Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper
Roughly chop the 6 slices of bacon and set aside.
In a large non-stick skillet, add a tsp of Olive Oil and the vegetables and cook until evenly browned.
Once browned, add the 4 eggs to the skillet and mix gently until the egg cooks and turns into a scramble, about 4 minutes.
Season with salt and pepper and serve warm.
