Mojito Fish & Shrimp Ceviche Recipe.


Ingredients:


3/4 Pound Fresh Tilapia (Cut into 1/2" Cubes)
1/2 LB Shrimp (Halved)
3/4 Cup Fresh Lime Juice
1/4 Cup Club Soda
1 TSP Sugar
1 1/2 TBSP White Rum
2 Large Plum Tomatoes (Seeded and Diced)
1 Large Jalapeno (Seeded, Ribbed and Finely Diced)
1/2 Small Red Onion (Finely Diced)
1 Clove of Garlic (Minced)
1 Avocado (Peeled and Diced)
1/4 Cup Fresh Mint Leaves (Packed and Chopped)
3 TBSP Fresh Cilantro ( Packed and Chopped)
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


In a large glass bowl, place the fish, scallops and pour in rum, toss to coat evenly.
Set aside.
In a medium glass bowl, mix together the lime juice, club soda and sugar.
Pour this mixture over the seafood and rum mixture and toss to evenly coat the fish.
Cover and place bowl in the refrigerator for 20 minutes, stirring half way through to make sure everything is coated evenly.
Remove bowl from refrigerator and add tomatoes, jalapeno, onion and garlic to the fish mixture, season to taste with salt and pepper and toss to combine well.
Cover and refrigerate for another 15 minutes.
Drain mixture of liquids and transfer to a serving bowl, gently stir in the mint, avocado and cilantro, serve immediately.
