2 TBSP Olive Oil
1/2 Red Onion (Chopped)
2 Cloves Garlic (Minced)
1/2 TSP Ground Cumin
1/4 TSP Ground Cinnamon
3 Cups Vegetable Broth
1 1/2 Cups Couscous
1/2 TSP Salt
1/2 TSP Ground Black Pepper
1/4 Cup Raisins
1/2 Cup Toasted Almonds (Sliced)
1 TBSP Fresh Parsley (Finely Chopped)
Pinch of Crushed Red Pepper Flakes
Heat a large pan on medium-high heat.
Add the olive oil, onion, garlic and spices, saut? Until the onion is translucent, stirring occasionally, about 5-6 minutes.
Add the vegetable broth, cover and bring to a boil.
Remove from the heat and allow to sit for 5-10 minutes or until the couscous has absorbed all of the vegetable broth.
Stir in the raisins, almonds, red pepper flakes and parsley prior to serving.
