Mushroom, Cheddar And Sun-Dried Tomato Egg Cups Recipe.


Ingredients:


10 Large Eggs
1 TSP Salt
1/2 TSP Fresh Ground Black Pepper
12 Button Mushrooms (Finely Diced
12 TBSP Sun-Dried Tomatoes (Finely Diced)
12 TBSP Cheddar Cheese (Shredded)
3 TSP Italian Seasoning


Recipe Instructions:


Preheat oven to 400 Degrees.
Spray a 12-cup muffin tin with cooking spray and set aside.
Crack the eggs into a large mixing bowl, season with salt and pepper and whisk until well combined, set aside.
Divide the sliced mushroom, sun-dried tomatoes and cheddar cheese between the 12 cups in the muffin tin.
Pour egg mixture over the toppings, making sure to leave about 1/3 of space at the top of each cup.
Bake in preheated oven for 12-14 minutes or until the eggs are set.
Run a knife or spatula around the edge of each muffin cup to loosen the egg muffin, remove egg muffins from the pan and serve.
