3 TBSP Butter
4 Cups Heavy Cream
1/3 Cup Powdered Stevia
1 TSP Vanilla Extract
1 Vanilla Bean (Scraped)
In a large pan, over medium heat, melt the butter and add half of the cream and the powdered sweetener, bring to a boil and then reduce the heat to a simmer and cook for 30-45 minutes stirring occasionally until the mixture thickens and coats the back of a spoon.
Remove from the heat and pour into a large glass bowl and allow to cool to room temperature.
Stir in the vanilla bean seeds and vanilla extract.
Whisk the remaining 2 cups of heavy cream into the mixture until evenly combined and smooth.
Chill mixture in the refrigerator overnight.
Transfer the mixture for a freezer proof container with an air-tight lid and place a sheet of parchment paper on the top.
Freeze for 6 hours, stirring every 30 minutes for the first 3 hours, then every hour afterwards.
Serve frozen in individual bowls.
