4 Salmon Filets (Skinless)
Pinch of Salt
Pinch of Ground Black Pepper
4 Slices Bacon
2 TBSP Olive Oil
4 Cups Arugula
2 TSP Lemon Juice
Preheat oven to 400 degrees.
Season salmon filets with salt and pepper, wrap each filet in a slice of bacon and secure with a toothpick.
Place a large, non-stick skillet over high heat until hot, add 1 TBSP of olive oil and heat until shimmering.
Add wrapped salmon filets to the skillet and cook until the bacon is crisp, roughly 3 minutes, flip and continue to cook for an additional 2 minutes.
Transfer skillet to the preheated oven and roast for 2 minutes.
In a large glass bowl, add the arugula, remaining TBSP of olive oil and lemon juice, toss to coat arugula evenly.
To serve, place a bed of arugula on a dinner plate and top with a wrapped salmon filet, enjoy hot.
