2 Skinless Salmon Filets
1 Large Orange (Juice and Zest from 1/2, peel and chop remainder)
1/4 Cup French Beans (Trimmed and Halved)
1/4 Cup Fresh Peas
1/4 Cup Snap Peas
1/4 Cup Vermicelli Rice Noodles
2 TSP Red Curry Paste
1 TSP Fish Sauce
3 Scallions (Finely Chopped)
2 TBSP Fresh Basil (Chopped)
Put a small skillet of water on to boil.
Add salmon filets and sprinkle with some orange zest.
When water begins to boil, add the beans and place the salmon on top of the beans.
Add peas and snap peas to the skillet and cook for 5 minutes.
Drain the vegetables and put water back in skillet and add noodles, let them soak for 5 minutes.
Put curry paste and fish sauce in a salad bowl with the orange juice, remaining zest and scallions.
Drain noodles when they are ready and add to salad bowl.
Toss well and add chopped orange, basil and cooked vegetables.
Pour over the juice from the salmon and then top bowl with salmon.
Eat warm.
