Bacon, Egg And Spinach Breakfast Bake Recipe.


Ingredients:


8 Eggs
2 1/2 Cups Frozen Spinach (Thawed & Squeezed)
6 Slices Bacon
1 Cup Mushrooms (Sliced)
1/2 Red Onion (Chopped)
1/2 Green Bell Pepper (Chopped)
1/2 Red Bell Pepper (Chopped)
1 1/4 Cup Cheddar Cheese (Shredded)
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


Preheat oven to 375 degrees and spray a 9x13 baking dish with cooking spray.
Place a medium sized skillet on a medium-high heat, add the chopped onion, bell peppers, mushrooms and season with salt and pepper.
Sautee until the vegetables are soft.
Add the vegetables to the baking dish and spread out evenly.
Next, add the thawed and drained spinach on top of the vegetables.
In a medium glass bowl, whisk the eggs and season with salt and pepper to taste.
Pour the egg mixture over the vegetables in the baking dish, crumble the cooked bacon over the top of the eggs and place in the oven for 35-45 minutes until the egg is firm when a toothpick is inserted into the middle of the baking dish.
