Oatmeal Pancake Recipe.


Ingredients:


1 Cup Old Fashioned Oats
1 Cup Whole Milk
2 Eggs
1 TBSP Unsalted Butter (Melted)
1 TBSP Sugar
2/3 Cup All Purpose Flour
2 TSP Baking Powder
1/4 TSP Salt
1/4 TSP Ground Cinnamon


Recipe Instructions:


In a medium glass bowl mix together the rolled oats and milk until well combined, set aside for 15 minutes.
Add the eggs and sugar to the oat mixture and combine.
Next, add the flour, baking powder, salt and cinnamon and mix again until just barely combined.
Let stand for a further 5 minutes.
Over medium high heat, heat up a large cast iron skillet.
Add 1 TSP of butter to the pan and melt.
Drop 2 TBSP of the batter into the heated skillet and cook until bubbles appear on the top of the pancake and edges begin to look dry, flip and cook for another 2-3 minutes.
Repeat with remaining pancake batter.
Serve warm and enjoy with toppings of your choice.
