Octopus & Red Chili Ceviche Recipe.


Ingredients:


1 1/2 LB Octopus Meat (Cooked)
1 Small Red Onion (Thinly Sliced)
1/2 Cup Fresh Lime Juice
3 TBSP Fresh Cilantro (Finely Chopped)
2 TBSP Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper
2 Red Chili Peppers (Seeded and Finely Diced)


Recipe Instructions:


Cut octopus into bit sized pieces and place in a small glass bowl, set aside.
In a medium sized bowl, place sliced onion add a little salt and cover with water for 10 minutes.
Drain and rinse well.
Place octopus in a large glass bowl, add the lime juice, 1/2 of the onions, chili pepper, salt and pepper, place in refrigerator for 2 hours.
Place remaining lime juice on the bowl with the remaining onions, put in refrigerator to 2 hours.
Remove both bowls from the refrigerator and combine the contents into the octopus meat bowl, add olive oil and cilantro and mix well to combine thoroughly.
Serve immediately.
