1 Cup All Purpose Flour
2 TSP Baking Powder
1 TBSP Sugar
1/4 TSP Salt
1 1/4 Cup Milk
1/4 Cup Unsalted Butter (Melted)
1/2 TSP Vanilla Extract
1 Egg
In a large glass bowl, sift together the flour, baking powder, salt and sugar.
In a medium glass bowl, whisk together the butter, milk, egg and vanilla extract.
Add wet ingredients to the dry ingredients and whisk until just combined (batter mix will be lumpy).
Allow the mixture to sit for about 15 minutes.
Dampen a paper towel with a little vegetable oil and wipe the towel across the surface of a frying pan or griddle.
Heat pan over medium heat and add 1/4 cup pancake batter to pan or griddle.
Cook for 2 minutes until small bubbles have begun to form on the top and edges of the pancake begin to turn golden brown.
Flip and cook for another 1-2 minutes on the other side.
Serve warm and enjoy!
