Olive Oil Cake With Orange Recipe.


Ingredients:


1 1/4 Cup All Purpose Flour
1 Medium Blood Orange
2 TSP Baking Powder
1/2 Cup Cornmeal (Medium Grind)
1/4 TSP Salt
1/4 TSP Baking Soda
2/3 Cup Sugar
3 Large Eggs
1/2 Cup Plain Yogurt
4 Slices Blood Orange
1/2 Cup Olive Oil


Recipe Instructions:


Place oven racks in the middle of the oven and set heat to 350 degrees.
Lightly grease a cake pan and set aside.
Zest the oranges and set aside.
Juice the oranges and set aside 1/4 cup.
In a medium glass bowl, whisk together the cornmeal, flour, baking soda, baking powder and salt, set aside.
Whisk together 1/3 cup of sugar and 1/4 cup of the blood orange juice in a large glass bowl, whisk in the olive oil, yogurt and eggs and add the flour mixture to the wet ones until evenly combined.
Fold in the orange zest.
Transfer the cake batter to the prepared cake pan, top with the slices of blood orange and sprinkle with the remaining sugar.
Bake in the preheated oven for 50-60 minutes until the top of the cake is golden brown and soft to the touch but a wooden toothpick comes out clean when inserted.
Allow the cake to cool for 30 minutes before removing from the pan.
