1 LB Oranges (Thinly Sliced)
1 Cup Water
1 Cup White Sugar
1 TBSP Lemon Juice
In a medium saucepan, over medium heat place the sliced oranges and stir in the water and sugar.
Slowly bring the mixture to a boil, stirring constantly to dissolve the sugar, once sugar has dissolved and the mixture is at a rolling boil, reduce the heat to low.
Continue to simmer for 30 minutes, skimming the foam off the top of the orange mixture as it accumulates.
Drop a small amount of the orange mixture onto a cool plate and wait for about 1 minute to see if the mixture has thickened.
If thickened enough, add the lemon juice, stir to combine and turn off the heat.
If not thick enough, continue boiling the mixture and test every 5 minutes.
Ladle the marmalade into individual mason jars, up to 1/8" from the top of the jar, place the lid on the jar, tighten and flip the jar upside down.
Continue filling all of the jars until the marmalade has been used.
Allow to cool and turn the jars upright, checking the lids have popped up.
If a lid has not popped up, store the jar in the refrigerator, the others may be stored at room temperature until ready to use.
