1 Whole Chicken (4-5 LBS, Giblets Removed, Trimmed & Rinsed and Patted Dry)
4 TBSP Butter (Unsalted)
6 Cloves of Garlic (Minced)
1 Lemon (Halved)
3 Sprigs Fresh Rosemary
Preheat oven to 450 degrees with the oven rack in the middle of oven.
Place chicken in a skillet or roasting pan.
Melt butter in a small saucepan over medium low heat, add the minced garlic and remove from heat once melted.
Brush the garlic butter mixture all over the chicken.
Season chicken liberally with salt and pepper and place the lemon halves and rosemary inside the chickens cavity.
Tie the chickens legs together with kitchen twine.
Roast chicken in the oven for 1 hour, basting it with the juices every 10-15 minutes using a spoon.
After 1 hour check temperature of chicken is 165 degrees with a meat thermometer inserted into the breast.
