4 (3") Marrow Bones
Coarse Salt
Fill a large glass bowl half way with ice water and add 1 TSP coarse sea salt per 1 cup of water.
Add the marrow bones and refrigerate for 12-24 hours, changing the water every 4 hours and replacing the salt each time.
Drain the bones and pat them dry.
Preheat oven to 450 degrees.
Place the drained and dried marrow bones in a roasting pan, standing up (with marrow facing upwards).
Roast in the oven for 25 minutes.
After 25 minutes, serve the marrow bones immediately with small spoons to access and scoop out the cooked marrow.
