2 Chicken Breasts (Boneless, Skinless)
1 1/2 Cup Cherry Tomatoes (Halved)
1/2 Cup Black Olives (Pitted and Halved)
2 TBSP Olive Oil
1 TSP Italian Seasoning
1/4 TSP Ground Black Pepper
Season chicken breasts with Italian seasoning and pepper, set aside.
Heat the olive oil in a large non-stick skillet over medium heat until it begins to shimmer.
Add the seasoned chicken breasts to the pan and cook for 5 minutes on each side.
Once cooked, transfer the chicken breasts to a plate and set aside.
In the same skillet the chicken was cook din, add the olives and tomatoes and cook for 3-4 minutes until the tomatoes begin to release their juices, add the chicken breast back to the pan and continue to cook for another 2 minutes.
Remove skillet from the heat, plate the chicken breasts and spoon over the tomato and olive mixture.
Enjoy hot.
