Panzanella Salad Bowl Recipe.


Ingredients:


2 Cups Cherry Tomatoes (Halved)
1 Clove Garlic (Crushed)
1 TBSP Capers (Drained and Rinsed)
1 Avocado (Pitted, Peeled and Roughly Chopped)
1 Red Onion (Thinly Sliced)
3 Slices Whole Wheat Bread
2 TBSP Olive Oil
1 TBSP Red Wine Vinegar
1/4 Bunch Fresh Basil (Torn)
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


In a medium sized glass bowl, place the halved tomatoes, garlic, capers, avocado and onion, season with salt and pepper and mix well, set aside.
Meanwhile, tear the 3 slices of whole wheat bread into chunks and place in another glass bowl, drizzle half of the olive oil and vinegar over the top.
When ready to serve, scatter the tomato mixture over the top of the bread and sprinkle with the torn basil leaves, drizzle with remaining olive oil and vinegar, stir and serve.
