2 Cups Vegetable Broth
1 TBSP Butter
1 Cup Couscous
1/3 Cup Parmesan Cheese (Grated)
1 TBSP Fresh Lemon Juice
1 TBSP Olive Oil
1/4 TSP Salt
1/4 TSP Ground Black Pepper
In a large pan, bring the vegetable broth and butter to a rolling boil.
Stir in the couscous, cover pan and remove from the heat.
Allow to stand for 5-10 minutes until the couscous has absorbed all of the vegetable broth.
Fluff with a fork, stir in the grated cheese, lemon juice, olive oil, salt and ground black pepper until well mixed.
Fluff once more with a fork and serve immediately.
