3 Avocados (Pitted, Peeled and Chopped)
1/4 Cup Fresh Peas (Blanched)
1 Sprig of Mint (Finely Chopped)
1 Scallion (Finely Sliced)
1 Lime (Zested and Juiced)
1/2 Jalapeno (Deseeded and Finely Chopped)
Pinch of Salt
Pinch of Ground Black Pepper
In a small glass bowl, add the peas and using the back of a fork, mash until almost smooth.
In a medium glass bowl, add the avocado, lime zest and juice and using the back of a fork, mash until almost smooth.
Transfer the pea mash to the bowl of mashed avocado, add remaining ingredients and gently mix until well combined.
Transfer to a container with an air-tight lid and refrigerate for 1 hour before serving.
