1 LB Powdered Sugar
2 Cups Crushed Graham Crackers
1 1/3 Cup Crunchy Peanut Butter
2 Sticks Butter (Melted)
1 Cup Semi-Sweet Chocolate Chips
1/4 Cup Peanuts (Crushed, for Topping)
In a large glass bowl.
combine the powdered sugar, graham crackers, peanut butter and butter until evenly mixed and incorporated.
Cover bowl with plastic wrap and refrigerate for 1 hour until mixture gets firm to the touch.
remove from the refrigerator and using your hands, roll into 1" balls making sure to compress the mixture as your roll into a ball shape, place balls on a baking sheet lined with parchment paper.
In a double boiler, place the chocolate chips and allow to melt gently.
Once melted, dip the peanut butter balls into the chocolate mixture and set back on the baking tray lined with parchment paper, sprinkle with a little crushed peanut and allow to rest for 1 hour.
