Pickled Onions Recipe.


Ingredients:


2 1/2 Cups Malt Vinegar
2 1/4 Cups Small Pickling Onions
1 TSP Salt
1 Cup White Sugar
10 Peppercorns
2 TSP Mustard Seed
1 TSP Coriander Seed
2 Bay Leaves


Recipe Instructions:


Put the onions in a large glass bowl and pour over a full kettle of boiling water.
Let stand for 30 seconds then drain into a colander, return to the bowl and pour over cold water, this will allow the skins to peel off easily.
Once peeled, layer in another clean glass bowl and sprinkle each layer with salt.
Cover and leave overnight or up to 24hrs.
Meanwhile add the vinegar and sugar into a large saucepan with the peppercorns, mustard seeds and bay leaves.
Put the lid on the pan, bring to the boil then remove from the heat and set aside to allow the spices to infuse.
The next day rinse the onions well and pat dry.
Pack the onions into sterilised jars then use a jug to pour over the vinegar, including the mustard, peppercorns and bay, completely covering the onions.
Seal and allow to mature for 6 weeks before eating.
