6 Eggs
1/4 Cup Butter
1/2 White Onion (Sliced)
Pinch of Salt
Pinch of Ground Black Pepper
1 Cup Pork Rinds (Ground)
1 Cup Mozzarella Cheese (Shredded)
1/2 Cup Parmesan Cheese (Grated)
1/2 Cup Asiago Cheese
Preheat oven to 450 degrees.
In a large cast iron skillet melt the butter over a medium-high heat.
Once butter has melted, reduce heat to medium-low and add the onions, season with salt and pepper, cover the skillet and cook, stirring occasionally for 13 minutes until onions begin to caramelize.
In a medium glass bowl, combine the pork rinds and cheeses and sprinkle half of the mixture over the onions.
Using the back of a spoon create 6 indentations on the top of the onion and cheese mixture and crack 1 egg into each.
Season again with salt and pepper and sprinkle remaining pork and cheese crumbs over the top.
Remove from the heat and bake in the oven for 10-15 minutes until eggs are set.
