Plum Flan Recipe.


Ingredients:


2 Cups Plums (Pitted and Sliced)
1 TBSP Water
1 (25oz) Package of Pectin (Unflavored)
1/2 Cup Hot Water
1/2 Cup Sugar
2 TBSP Lemon Juice
1/2 Cup Evaporated Milk


Recipe Instructions:


In a heavy bottomed pan over medium-low heat simmer the plums for about 10 minutes covered, while stirring occasionally.
Remove from the heat and set aside to cool.
In a medium glass bowl, add the pectin and hot water, stir to dissolve.
Once the pectin has dissolved, add the plums, sugar and lemon juice and mix until the sugar has fully dissolved.
Place bowl in the refrigerator for 45 minutes to cool down.
In a separate medium glass bowl, add the evaporated milk and with an electric whisker, mix until thick, about 3-5 minutes on medium speed.
Add the whipped evaporated milk to the plum and pectin mixture and beat again until light and fluffy, about 4 minutes.
Refrigerate again for another 3 hours until firm before serving.
