Poached Cod With Pan Cooked Vegetables Recipe.


Ingredients:


2 Cups Vegetable Stock
1 Bunch Fresh Parsley (Finely Chopped)
1 Stalk Lemongrass (Chopped)
Pinch of Sea Salt
4 Cod Filets
1/4 Cup Carrots (Chopped)
1/4 Cup Celery (Chopped)
1/4 Cup Zucchini (Chopped)


Recipe Instructions:


In a shallow pan over medium-high heat, bring the vegetable stock to a rolling boil.
Add the herbs, lemongrass and salt.
Reduce heat to a simmer.
Heat a large non-stick skillet over medium heat and add a TSP of olive oil.
When hot, add the vegetables and fry for 5 minutes.
While the vegetables are cooking in the skillet, add the cod filets to the pan with the vegetable stock and poach the filets for 3-4 minutes.
Once poached, remove the cod from the stock and set aside.
Pour the vegetable stock over the skillet of vegetables and simmer for 10-15 minutes or until the vegetables are tender, drain.
Arrange the vegetables on a plate or serving platter, top with the poached cod and sprinkle with additional lemongrass and fresh herbs, serve hot.
