2 1/4 Cups Vegetable Stock
1 Cup Polenta (Very Fine)
2 Cups Steamed Vegetables (Broccoli, Fennel, Carrots, Zucchini, Etc)
1 TBSP Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper
1 Fresh Basil Leaf (Chopped)
In a pan over medium-high heat bring the vegetable stock to a boil.
Stir in the polenta.
Next, add the oil and salt and continue to cook for 3-4 more minutes.
Remove the polenta from the heat and cover, allow to stand for 20 minutes until all of the vegetable stock has been absorbed.
To serve, place the cooked polenta on a plate and top with the steamed vegetables and a sprinkling of chopped basil leaf.
