Baked German Potato Strudel Recipe.


Ingredients:


2 Cups Finely Ground Spelt Flour
2 TBSP Coconut Oil (Melted)
2 Eggs
Pinch of Salt
4 Cups Potatoes (Boiled and Grated)
1/4 Cup Parmesan Cheese (Grated)


Recipe Instructions:


In a large glass bowl, add the grated potatoes, pinch of salt and grated parmesan cheese and stir to combine evenly, set aside.
Preheat oven to 325 degrees.
In the bowl of a food processor, add the flour, coconut oil, eggs, 3 TBSP warm water and a little salt and process until a dough forms.
Once formed, rest dough for 30 minutes in a warm location.
Once rested, place dough on a floured dish towel on a flat surface and roll out until very thin.
Slice dough into 2 halves down the middle and place 1/2 of the potato mixture in the middle of each slice of dough.
Gently fold the dough over the potato mixture, crimping the top with your fingers to seal.
Place the two rolls on a lightly oiled pan and bake in the preheated oven for 15-20 minutes.
Once cooked, remove from the oven and enjoy warm.
