4 Large Potatoes (Russets Work Well)
1 Medium Onion
1 Egg
1/4 Cup All Purpose Flour
Pinch of Salt
Pinch of Ground Black Pepper
Peel the potatoes and onion and grate into a medium glass bowl lined with a strainer or kitchen towel.
Try to remove as much of the liquid as possible.
Discard liquid and return potato and onion mixture to the bowl.
Add remaining ingredients to potato and onion mixture and combine well.
In a large skillet over medium heat, add a little vegetable oil.
Next, add 1-2 TBSP of the potato mixture to skillet and form into a pancake round, fry for roughly 2-3 minutes on each side until the pancake turns golden brown and crispy.
Remove pancake from pan and allow to drain on a piece of kitchen paper towel, serve warm with apple sauce or sour cream.
