3 LBs Yukon Gold Potatoes (Peeled, Cut into Chunks, Cooked)
1 1/2 Cups Mayonnaise
1 TBSP Sugar
1 TBSP White Wine Vinegar
1 TBSP Yellow Mustard
1 TSP Garlic Powder
1/2 Red Onion (Minced)
2 Celery Ribs (Thinly Sliced)
4 Eggs (Hard Boiled, Peeled and Chopped)
1 TSP Paprika
In a large glass bowl, combine the mayonnaise, mustard, garlic powder and sugar and mix well.
Add in the chopped potatoes, minced onion, sliced celery and chopped eggs, mix gently to combine evenly.
Add the paprika, stir to randomly mix in with the potato salad.
Refrigerate for 2 hours or until ready to serve.
