2 TSP Olive Oil (Divided)
1 TSP Red Wine Vinegar
1 Cup Cooked Quinoa
1 Cup Grape Tomatoes (Halved)
1/2 Unsalted black beans (Canned)
2 TBSP Cilantro (Chopped)
2 Large Eggs
1/2 Ripe Avocado (Sliced)
Whisk together 1 1/2 TSP olive oil and red wine vinegar.
Combined the quinoa, tomatoes, beans, cilantro and toss gently to combine.
Heat a non-stick skillet over medium heat and add remaining oil, crack eggs into pan and cook until whites are solid.
Drizzle dressing over quinoa mix, top with fried egg and sliced avocado, serve warm.
