1/3 Cup Coconut Flakes
1/2 TSP Ground Cinnamon
2 TBSP Stevia
2 TBSP Unsweetened Chocolate Chips
1/2 Cup Fat Free Nut Butter
1 TSP Vanilla Extract
1 Cup Quinoa (Uncooked)
Line an 8x8 baking dish with parchment paper, set aside.
In a large glass bowl combine the nut butter with the sugar, vanilla, cinnamon, quinoa, chocolate chips and coconut until evenly combined.
Spread the mixture into the bottom of the baking dish using a spatula and press down to remove any pockets of air.
Score into 6 bars using a butter knife.
Refrigerate for 2 hours to harden.
Serve chilled.
